Vegan Mushroom Stroganoff

- 1 cup of vegetable broth
- 1 cup of unsweetened almond milk

- 1 tablespoon of lemon juice
- 8 ounces of pasta (I like to use fettuccine, but any kind will work)
- Chopped fresh parsley and chives for garnish

Directions:

1. Start by cleaning and slicing your mushrooms. You want them to be about 1/4 inch thick. Set them aside.

2. In a large pan, heat up the olive oil over medium heat. Add in the chopped onion and sauté it until it becomes translucent, about 5 minutes.

3. Add in the minced garlic and continue to sauté for another minute.

4. Add in the sliced mushrooms and stir everything together. Cook for 5-7 minutes, or until the mushrooms have released their moisture and have started to brown.

5. Once the mushrooms have browned, add in the thyme, smoked paprika, salt, and black pepper. Stir everything together and cook for another minute.

6. Sprinkle the flour on top of the mushroom mixture and stir everything together until the flour has been absorbed.

7. Slowly pour in the vegetable broth and almond milk, stirring constantly. Bring the mixture to a simmer and let it cook for 5-7 minutes, or until it starts to thicken.

8. Add in the soy sauce and lemon juice, stirring everything together.

9. While the sauce is cooking, bring a pot of salted water to a boil. Cook your pasta according to the package instructions.

10. Once the pasta has finished cooking, drain it and add it to the pan with the mushroom sauce. Stir everything together until the pasta is completely coated in the sauce.

11. Serve immediately, garnished with chopped parsley and chives.
