Ingredients:
- 1 tablespoon of olive oil
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 teaspoons of ginger, grated
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1 teaspoon of paprika
- 1 teaspoon of turmeric
- 1/4 teaspoon of cayenne pepper
- 1 can of chickpeas, drained and rinsed
- 1 can of diced tomatoes
- 1 can of coconut milk
- 2 cups of spinach leaves
- Salt to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat. Add the chopped onion and sauté until softened, about 5 minutes.
2. Stir in the minced garlic and grated ginger and cook for another minute.
3. Add the ground cumin, ground coriander, paprika, turmeric, and cayenne pepper. Stir well to combine and cook for an additional minute until fragrant.
4. Add the drained chickpeas, diced tomatoes, and coconut milk to the skillet. Stir well to combine and bring to a simmer.
5. Reduce the heat to medium-low and let the curry simmer for about 10-15 minutes to allow the flavors to meld together.
6. Add the spinach to the skillet and stir well. Let the spinach wilt in the curry for about 2-3 minutes.
7. Season the curry with salt to taste and serve hot.
Additional Tips:
- You can use fresh tomatoes instead of canned tomatoes if you prefer. Just chop the tomatoes and add them to the skillet along with the chickpeas.
