To start making the Oreo Cheesecake Bars, you will need to gather the following ingredients:

For the Oreo Crust:
- 24 Oreo cookies
- 5 tablespoons of unsalted butter, melted
- Pinch of salt

For the Cheesecake Filling:
- 24 ounces of cream cheese, at room temperature
- 3/4 cup of granulated sugar
- 3 large eggs, at room temperature
- 1 teaspoon of vanilla extract
- Pinch of salt
- 12 Oreo cookies, coarsely chopped

For the Topping:
- 1 cup of sour cream
- 2 tablespoons of granulated sugar
- 1 teaspoon of vanilla extract
- Pinch of salt
- 6 Oreo cookies, coarsely chopped

Instructions:

1. Preheat your oven to 325°F. Line a 9-inch square baking pan with parchment paper and set aside.

2. Start making the Oreo crust by placing the 24 Oreo cookies in a food processor and pulse until they are finely ground. In a medium-sized bowl, combine the Oreo crumbs, melted butter, and pinch of salt. Stir until the mixture is well combined.

3. Pour the Oreo crumbs into the prepared pan and press them into an even layer on the bottom. Use your hands or the back of a spoon to do this. Place the pan in the fridge for 10 minutes to chill while you make the cheesecake filling.

4. In a large bowl, beat the cream cheese and granulated sugar together until smooth and creamy. Add in the eggs, one at a time, beating well after each addition. Then, beat in the vanilla extract and salt.

5. Add the coarsely chopped Oreo cookies to the cheesecake mixture and stir until they are evenly distributed.

6. Pour the cheesecake mixture on top of the Oreo crust and spread it into an even layer.

7. Bake the Oreo Cheesecake Bars for 40-45 minutes or until the edges are set but the center is still slightly jiggly.

8. While the bars are baking, make the topping by whisking together the sour cream, granulated sugar, vanilla extract, and salt in a small bowl.

9. Once the cheesecake bars are done baking, remove them from the oven and let them cool for at least 10 minutes.

10. Pour the topping over the cheesecake bars and spread it into an even layer. Sprinkle the coarsely chopped Oreo cookies on top of the sour cream mixture.

11. Return the pan to the oven and bake for another 10 minutes.

12. Remove the Oreo Cheesecake Bars from the oven and let them cool completely before slicing into squares.

Enjoy!
